Dawn, Don't know what to say. Thank you. I will stick with the comment of the woman sitting beside me when the lamb came out, "Perfect." Timing and flow were great -- especially considering the number of ingredients going into each dish. And at least as important for an old consultant, is that you checked in with me to make sure everything was moving at the right pace. The hors d'oeuvres in the wine cellar were a stunning beginning to the evening. The blini "pancake" stack and the perfect amount of caviar. I am not personally a salad person, and I am not really into goat cheese. You said in your introduction that the tastes should blend together, and oh my goodness they did. The "salad" person to my left was enthralled. (And my plate was empty when it was all over and done.) The lamb chops were simply magnificent. I will leave the "porcini dust" details to you — the result was just absolutely perfect. Clearly we built the evening backwards from the Finale, a 1983 Chateau d'Yquem. These Sauternes are so complex, and of course impossible to figure out from a written description of a 31 year old wine. I frankly thought it was a lost cause to try to match anything with it. I finished half a glass before daring to try what you had prepared. As I mentioned to you in passing, after tasting the "blue cheese cake" when I went back to the d'Yquem, I could taste no difference at all in the Sauterne. If your pairing had been too sweet, the wine would have felt "off". So many other things you could have done could have challenged or even ruined the taste of this special dessert wine. But what you did worked. You are my new goddess. As an old psychologist I was comfortable with your doing this dinner tonight because I loved the way your brain worked as you thought through this dinner and the wine pairings. Clearly we were not disappointed. So, enough. I wanted to express my appreciation, but also wanted to give you some details, since obviously you were able to orchestrate an enormous number of details together to make this be a wonderful, seamless dinner.
